Chicken Fried Rice

Ingredients:

1 chicken breast (cut up into bite size pieces)
3 eggs
5 tbsp. canola oil
1 whole garlic (minced)
1/4 onion (diced)
4 cups of cooked white rice
3 tbsp. of soy sauce
1 tbsp. brown sugar
salt
4 baby carrots (diced)
2 green onions (diced)
Directions:
1. Sauté the chicken using 2 tbsp. of oil in a pan and put any seasoning you want on it. Cook until brown. Set Aside.
2. In a smaller pan fry the egg in 1 tbsp. of oil. Set aside.
3. Heat 2 tbsp. of oil in a pan. Add garlic and onion. Cook until light brown.
4. Add rice to the garlic and onion. Stir and cook for 3 min.
5. Add the soy sauce and brown sugar and a pinch of salt to the rice. Stir and cook for 2 minutes.
6. Add carrots, green onion to the rice. Stir and cook for 1 min. Turn of stove.
7. Add the cooked chicken and cooked eggs to the rice and stir all together.
Try cooking some frozen egg rolls or pot sticker for an appetizer.

Vermicelli with Vegetables

Ingredients:

1 lb. glass noodles or potato starch noodles
4 green onions, cut into 1in. length
1 onion, julienned
1 medium carrot, julienned
8 oz spinach
1 tbsp. sesame oil
2 tsp. crushed garlic
3 tbsp. brown sugar
2 tbsp. soy sauce
1 tsp. sesame seeds

Directions:
1. Soak noodles in hot water for about 15 min., then cut a couple of times to make it shorter.
2. Combine noodles and all the vegetables, except spinach, in a pan.
3. Stir in the sesame oil, garlic, sugar, and soy sauce over medium heat for 5 min.
4. Turn off heat and add spinach and sesame seeds while still hot and stir. Serve.
