Fried Red Snapper

Ingredients:

1 Red Snapper fillet
1 egg
3 tbsp. of flour
1/2 cup of canola oil
1 garlic (finely chopped)
1 onion (diced)
3 baby carrots (sliced long way)
4 green onions (diced)
1 tsp. ginger root (finely chopped)
4 tbsp. rice wine
3 tbsp. soy sauce
3/4 cup of water
1 tbsp. cornstarch
2 tsp. water
salt

Directions:
1. Cut the red snapper to 1/2 in. cubes.
2. In a medium bowl, beat together egg, flour, 1 tbsp. of soy sauce and 3 tbsp. of rice wine.
3. Add red snapper to the mix and cover well.
4. Heat oil in frying pan. Fry the red snapper until golden brown. Set aside.
5. In another pan, place 1 tbsp. of oil from the red snapper pan and heat.
6. Add garlic, onion, and ginger to the heated oil.
7. Stir in the remaining soy sauce and rice wine.
8. Add 3/4 cup of water.
9. In a small bowl, mix the cornstarch and 2 tsp. on water.
10. Add the cornstarch mix to the pan and stir.
11. Add the fried snapper, green onion, carrots and a pinch of salt to the pan, stir and let cook for one minute. Serve.
Serve this red snapper over white rice.

BBQ Baby Back Ribs

Ingredients:

1 slab of baby back ribs
Johnny’s Seasoning
Jack Daniels barbeque Sauce

Directions:
1. Preheat oven for 400 degrees
2. Rinse the ribs with cold water and sprinkle some Johnny’s seasoning all over, front and back.
3. Place ribs on a baking pan with a rack on it. Put a cup of water in the pan.
4. Cover the ribs with foil and place in the oven.
5. Cook the ribs for 2 hours on 400 degrees.
6. Cover the ribs with Jack Daniels barbeque sauce. Place back in the oven.
7. Cook ribs for another 30 minutes. Serve.
